Tammi’s Brunch Smackdown: Rockin’ Ham & Swiss Mushroom Croissants

Tammi shares her warm and savoury brunch recipe

Brunches seem to be the same around here—eggs, bacon and toast. Yet my mission is to switch things up and start eating fresh. My Rockin’ Ham & Swiss Croissants recipe uses fresh all-butter gourmet croissants, sliced deli ham and Swiss cheese—all found at Sobeys.

For the side, I chose Sobeys’ ready-to-go fresh fruit platter with watermelon, strawberries, blueberries and melons. YUM!

It’s easy to try this recipe at home (and SO worth it). Here’s what you need to know:

Tammi’s Ham and Swiss Mushroom Croissants

Serves 2

Ingredients:

2 tablespoons butter

1 cup sliced mushrooms

2 tablespoons all-purpose flour

3/4 cup milk

Salt and pepper to taste

2 large fresh croissants, halved horizontally

4 slices of deli ham

4 slices Swiss cheese

Instructions:

Preheat oven to 350°F.

Melt butter in saucepan over medium heat. Sauté mushrooms until tender and liquid has evaporated.

Whisk in flour, and then gradually stir in the milk. Cook and stir over medium heat until mixture comes to a boil and thickens enough to coat a wooden spoon. Season to taste with salt and pepper.

Lay bottom halves of croissants on a baking sheet. Top with 2 slices of ham, 2 slices of Swiss cheese, and spoon over mushroom sauce. Top with the other half of the croissant.

Bake at 350°F for about 10 minutes or until heated through. Enjoy warm.

    My kiddos are HUGE croissant fans – this is a GREAT option for a brunch ‘sandwich’. Adding the mushrooms to this recipe got me thinking that I could probably add another few things in there – maybe sneak in some thin red bell pepper slices. YUMMO!  GREAT recipe!  (And Sobey’s is a weekly stop at our house.  I really kinda love it there!)
