Brunch shouldn’t be reserved just for holidays! With a little planning, you can create a brunch to suit any taste.
Behold, the Breakfantastic Brunchabilly!
This decadent all-out brunch includes chocolate chip waffles, pancakes, flaky gourmet croissants, frittata and—did I mention chocolate? Oh, and brunch just isn’t brunch without eggs and bacon. Period!
Here’s how the Breakfantastic Brunchabilly breaks down:

Sobeys has these wonderful, fresh and flaky all-butter croissants they bake in-store throughout the day. They are scrumptious to eat on their own, or slathered with butter, jam or Nutella. Buon Appetito!
You can top your croissant any way you like, but here are my top three picks:
Warm and Flaky Croissant with Roasted Tomatoes and Bocconcini
Slice several Roma or plum tomatoes crosswise. Lay on lightly greased baking sheet. Drizzle with olive oil, salt, pepper and oregano. Bake for 20 minutes at 350ºF.
Slice a croissant in half horizontally. Top with roasted tomatoes and sliced bocconcini cheese. Return to oven and bake until cheese is melted.
Use any remaining roasted tomatoes as a side dish for bacon and eggs.
Warm and Flaky Croissant with Bacon and Cheddar Cheese
Cut a croissant in half horizontally and place on a baking sheet. Top with cooked slices of bacon and sliced Cheddar cheese. Pop in 350ºF oven until cheese is melted.
Warm and Flaky Croissant with Spinach and Feta
Sauté fresh spinach with 1 tsp of olive oil in a frying pan over medium heat until wilted. Slice croissants in half horizontally and place on a baking sheet. Add spinach and top with crumbled feta. Pop in 350ºF oven until cheese is melted.
Chocolate Chip Waffles with Blueberries and Raspberry Coulis: Chocolate Chip Waffles are a decadent way to start the day. Top with whipped cream, yogourt, banana or blueberries and a drizzle of raspberry coulis.

Veggie Frittata with Feta
Serves 6
Ingredients:
½ onion, chopped
½ red pepper, diced
4 cremini mushrooms, chopped
¼ bunch fresh spinach
5 eggs
¼ cup milk
¼ cup feta cheese, crumbled
Salt, pepper
1 tablespoon sunflower oil
Instructions:
Heat sunflower oil in an oven-proof skillet over medium heat.
Add vegetables and cook for about 5 minutes or until softened.
Whisk eggs and milk in a bowl.
Pour egg mixture over vegetables and sprinkle with feta cheese. Cover and cook over medium-low heat for 7 minutes or until bottom and sides are firm but top is still slightly runny.
Place pan in oven and broil until golden and set, about 1 minute.
Cut into portions and place on warm croissant.
